- Avocados: Make sure they are fully ripened. A ripe avocado should have dark green to almost black skin, and have a little give when squeezed. It should not be overly mushy or soft, or have dents.
- Lime juice: Be sure to use fresh. Lime juice helps keep the guacamole fresh and slows down the oxidation process. It also adds a bright flavor, making it extra delicious.
- Tomatoes: Use Roma tomatoes or grape tomatoes. Other tomatoes can be too juicy/watery for guacamole.
🍅Substitutions/Variations
- Lime: If you can't use lime juice, fresh lemon juice is fine too.
- Cilantro: If cilantro tastes like soap to you, leave it out! Guacamole without onions and cilantro is delicious too!
- Jalapeños: For an extra kick, you can add some of the jalapeño seeds into the guacamole. If you don't want any spice, omit the jalapeños altogether!
- Tomatoes: Make your guacamole without onions or tomatoes. Some people do not like tomatoes in their guacamole and that's perfectly okay. Just leave it out as well.
- Garlic: You can also use garlic powder instead of a fresh clove. Start with ½ teaspoon and go from there.
- Onion: I know this is a guacamole recipe without onion, BUT some people just don't like using fresh pungent onion in their guacamole. If you like onion powder, feel free to add ½ teaspoon.

- Grate the garlic, and chop the tomatoes, jalapeños, and cilantro. Then juice the lime and set aside.

- Consistency: Mash the avocados as chunky or smooth as you like. I prefer a chunkier consistency, so I don't over-mash them. You can use a food processor if you like an ultra-smooth consistency.
- Customize: Make this guacamole your own. Add more or less of what you like, and omit what you don't.
- Prevent browning: Keep the guacamole from turning brown in the refrigerator by squeezing lime juice over the top and flattening it out with the back of a spoon. Then take plastic wrap and press it tightly against the top of the dip, and wrap the bowl tightly in plastic wrap.
- Add enough salt: Salt is a flavor enhancer. If you don't use enough, it can make the avocados taste bland. Of course, you don't want to add too much, so add a little at a time and taste as you go.
- Wash your hands after handling the jalapeño: The last thing you want to do is touch your eye after slicing a fresh jalapeño pepper. Wash your hands immediately after handling.

As long as it's not more than 3 days old, and has been stored in an airtight container in the refrigerator, browned guacamole is completely safe to eat. The brown color is a result of the avocado flesh oxidizing.
An article from Food Network shares that to prevent browning, squeeze some citrus juice over the top of the guacamole, then flatten the surface of the dip with the back of a spoon, press plastic wrap against the dip, and then wrap the bowl tightly with more plastic wrap to keep air out.
When choosing a ripe avocado, you want to pay attention to color, appearance, and firmness.
A ripe avocado will have a dark green to almost black color on the outside. The appearance of the skin should have a bumpy texture. Avoid any that have dents/sunken spots. Lastly, give the avocado a gentle squeeze. If it gives a little, it's ripe. If it gives too much, it could be overripe. Underripe avocados have no give.

Ingredients
- 3 small hass avocados ripened
- 2 teaspoons fresh lime juice
- 2 garlic cloves grated
- ½ teaspoon fresh jalapeño minced, seeds removed

- ½ small Roma tomato diced, seeds and juices removed
