❤️Why You'll Love this Recipe
- The vegan cheese sauce: I can write this whole post just raving about the vegan cheese sauce alone. It's made with potatoes as part of the base, so there's obviously a lot to love here.
- Customizable: You don't have to use the toppings I'm using here. Add whatever you want and leave out anything you don't like. All you really need is the cheese sauce and tortilla chips. The rest is up to you. So, if your kids can't eat onions or jalapeños, make it kid-friendly and add their favorite toppings.
- Great for hosting: Everybody loves nachos, and these dairy-free nachos are no exception. Make them for parties, or game days, or make a nacho bar. Then everyone can choose their toppings!
- Vegan and gluten-free
📝Ingredient Notes
- Vegan cheese sauce: Depending on your spice tolerance, this cheese sauce could be a little spicy for you. It's meant to be used on anything nacho cheese related, so it does contain a few jarred jalapeños. If you're worried you may be sensitive to the heat level, just leave the jalapeños out or add them to taste.
- Guacamole: I use my recipe for Guacamole without Onions. Since these nachos already have tomatoes, I leave them out in the guacamole. But you can definitely leave them.
🌶Substitutions/ Variations
Make these nachos your own!
- Tortilla chips: Instead of tortilla chips, use baked potatoes or even crispy French fries!
- Protein/Meat: If you're vegan or vegetarian, stick with black beans or use refried beans or pinto beans. For those who love meat on their nachos, use ground beef with taco seasoning, pulled pork, or chicken! I recommend using 1 pound of meat with 2 tablespoons of taco seasoning.
- Dairy-free sour cream: If you don't have a favorite non-dairy sour cream, you can also use SoDelicious Unsweetened/Plain Coconut Milk Yogurt. It tastes a lot like sour cream, but the consistency is a bit thinner.
- Onions: Use sweet yellow onions, red onions, green onions, or no onions at all!
- Salsa: Sometimes I like to add salsa to these nachos too! Pico de Gallo is another good option.
- Guacamole: If you don't want to make guacamole, either make an avocado mash with avocados, fresh lime juice, and salt or just add sliced/diced avocados.
- Black olives: I love black olives on my nachos! If you like them too, feel free to add them.
🧀How to Make Dairy-Free Nachos
- To keep the chips crispy, and help prevent them from getting soggy as quickly, add them to a baking sheet in a single layer and bake for 5 minutes at 350 degrees Fahrenheit.
2. Pour the cheese sauce evenly over the nachos.
3. Add the black beans or your choice of protein.
4. Then add the rest of your toppings of choice.
🧊Storing
These nachos should be eaten while they're fresh. Storing the chips with cheese sauce and toppings will make them soggy.
If you have to store them, the toppings should be scraped off the chips and stored in an airtight container in the refrigerator. Always use fresh, crunchy chips for your nachos.
✅Pro Tips
- Use your favorite toppings: Everybody's different. If I didn't include a topping you like, throw it on there. If I used some you don't like, leave them off. It's no problem.
- Use extra vegan cheese sauce: I can't be the only one who loves extra cheese on my nachos. That's my personal recommendation. But of course, you do you!
- Serve fresh: Nobody likes soggy nachos. Be sure to assemble your nachos right before they're ready to be served.
- Prep toppings and ingredients before an event: Meal prep can't get any easier here. If you're planning on taking these nachos somewhere or hosting an event, make your life easier and prep everything the day before. Store items in a separate container in the refrigerator.
- Evenly distribute the toppings: To get the perfect bite with every chip, evenly distribute all of the toppings.
