Healthy Vegan Chocolate Milk
This healthy vegan chocolate milk is sweet and chocolatey with no weird aftertastes. It's refined sugar free with a pure and delicious taste you won't be able to get enough of. A beverage even perfect for your little ones who love chocolate milk.
Place the almond milk, dates and cacao powder in a high-speed blender.
For a subtle sweetness, use 1 date. For more sweetness, use 2 dates.
Blend until there's no pieces of dates left behind and the mixture is completely smooth (this takes about 30 seconds on full speed in a vitamix blender. If your blender cannot smooth out the dates you can always strain the chocolate milk or just use pure maple syrup).
To keep the milk and cacao powder from separating, pour it into a small pot and let it heat up over medium heat. Keep whisking and, right before it comes to a light boil, remove it from the heat. Then continue to whisk a couple more times. Be careful not to let it boil or the milk can foam over and even start to thicken in the refrigerator.
Allow it to cool down and then transfer into milk jars, or whatever glass jars you have to store them. You may still have to give it a little shake after long periods of sitting, but not like you do if you choose not to heat it.
Refrigerate until it's nice and cold. Enjoy!
- For a deeper chocolate flavor, add ½ teaspoon more of cocoa powder.
- If your dates are not soft, soak them in hot boiling water for about 30 minutes to help soften them before blending.
- If the milk boils any, it will thicken some as it cools in the refrigerator. If this happens, just add some more almond milk before drinking and shake it to combine.
