Ingredients

  • 5 cups romaine lettuce, chopped (a little more than 1 heart of romaine)
  • 1 english cucumber chopped (in quartered pieces)
  • 1 cup grape tomatoes sliced in half
  • 1 green bell pepper diced
  • ¾ cup kalamata olives sliced in half
  • ¼ medium sized red onion thinly sliced
  • 2 teaspoon fresh dill finely chopped

Lemon Vinaigrette

  • 1 ½ tablespoons olive oil extra virgin
  • tablespoons fresh lemon juice
  • 1 garlic clove grated
  • 2 teaspoons honey (or pure maple syrup) or to taste
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon coarse black pepper

Instructions

  • Start by washing your produce and then chop as directed above.
  • Toss all of the salad ingredients together.
  • Whisk together the ingredients for the lemon vinaigrette.
  • Pour in the dressing a little at a time, and shake in a bowl with a lid to evenly combine.
  • Enjoy!

Notes

  • If you don't plan on finishing all of the salad, only put the dressing on what you're eating. Refrigerated lettuce that has dressing on it will get soggy.
  • You may not need all of the dressing. Add some a little at a time.
