In a skillet over medium heat, add the olive oil and chopped onions. Let it cook down for about 5 minutes.

Next, add the grated garlic, carrots and potatoes. Sautee for about 5-8 minutes, then add in the spices.

Pour in the white wine and then the broth. Next, stir in the white beans and lemon juice. Bring to a boil then reduce to a simmer and cover the pot.

 Take out about 3 cups of the beans with some of the liquid (and no carrots). Blend the beans and add it back to the pot.

Add the salt and pepper, then bring to a boil again, reduce the heat to a simmer and cover for 30 minutes. Add the kale at least 10 minutes before you're ready to serve.
